Raw Mango Kothsu - Mavinakayi Gojju

Ingredients

Mango (raw)
- 1

Asafoetida
- 2 pinches
•
Green chillies
- 3
•
Fenugreek seeds
- ¼ cup
•
Turmeric powder
- ½ teaspoon
•
Salt
- as required
•
Jaggery
- 1 tablespoon
•
Oil
- as required
•
Mustard seeds (for seasoning)
- ½ teaspoon
Method
1.
Soak
the methi
seeds
with enough
water
for at least 4 hours as the
seeds
have to be soft.
2. Select
mango
which is sweet and sour in nature.
3.
Scrape
outer skin and
slice
into thin, broad pieces.
4.
Heat
oil
in a
frying
pan,
add
mustard
, slit
green chillies
and then
mango
pieces.
5.
Fry
for a minute,
add
enough
water
to
cover
the pieces.
6.
Mix
salt
,
turmeric
to that.
7. The soaked methi with the
water
and the powdered
jaggery
should be added.
8.
Cook
till
mango
becomes soft and
mixture
becomes thick.
