Pumpkin Raita

Ingredients
•
Pumpkin (red or yellow)
- 200 grams
•
Yogurt/Curd
- 400 milliliters
•
Red chilly powder
- ½ teaspoon
•
Cumin powder
- ½ teaspoon
•
Green chilly (finely chopped)
- 1
•
Coriander leaves (chopped)
- 1 bunch
•
Salt
- as required
Method
1.
Remove
outer skin from yellow
pumpkin
.
2.
Cut
the
vegetable
into thin 1 inch long pieces.
3. Put in
boiling
water
and allow to
boil
once and immediately
drain
off excess
water
.
4.
Heat
little
oil
, season with sliced
green chillies
, mustard and
mix
with
pumpkin
.
5.
Add
grated fresh coconut,
salt
, finely chopped
coriander leaves
.
6. Whip fresh thick
curds
and
mix
properly.
7.
Add
red chilly powder
,
cumin powder
on top of it
8.
Serve
immediately or chilled for 1 or 2 hours.
