Potato Rice

Ingredients

Rice
- 1 cup
•
Potato
- ½ kg
•
Green chillies
- 8
•
Onions
- 2
•
Turmeric powder
- ¼ teaspoon
•
Tomatoes
- 4
•
Coriander powder
- ½ teaspoon
•
Cumin powder
- ½ teaspoon
•
Coriander leaves (finely cut)
- 1 tablespoon
•
Salt
- as required
•
Garam masala powder
- ½ teaspoon
•
Cashew nuts (broken)
- 1 tablespoon
•
Oil
- 3 tablespoons
Method
1.
Grind
onion
,
tomatoes
and
green chillies
without
adding
water
.
2.
Cook
rice
and allow it to cool.
3. Separate the grains.
4.
Heat
oil
and
fry
the
seasonings
.
5.
Add
ground paste
and
fry
in a medium flame till complete moisture dries up and
oil
is separated from it.
6.
Add
coriander
cumin powder
,
salt
,
garam masala
, and
turmeric powder
.
7.
Fry
for another one minute.
8.
Add
cooked
rice
and
mix
well till
rice
become soft.
9.
Remove
from fire.
10.
Peel
potatoes
and
cut
into thin 1 inch long pieces and deep
fry
in
oil
crisp.
11.
Serve
rice
hot topped with fried
potatoes
and
cashew nuts
.
12. Garnish with finely
cut
coriander leaves
.
