Pomegranate Rice

Ingredients

Rice
- 1 cup
•
Pomegranate
- 1
•
Green chillies
- 4
•
Red chillies
- 3
•
Cashew nuts
- 1 tablespoon
•
Curry leaves
- few
•
Oil
- 2 tablespoons
•
Salt
- as required
•
Coriander leaves
- a few
Ingredients For Seasoning
•
Mustard seeds
- ¼ teaspoon
•
Black gram dal
- ½ teaspoon
•
Bengal gram dal
- ½ teaspoon
Method
1.
Cook
rice
till each grain is separate.
2. Allow it to cool.
3.
Peel
pomegranate
and
take out
the
seeds
.
4.
Crush
it, or put in a mixie and extract juice from it.
5.
Strain
and
remove
the
seeds
.
6.
Heat
oil
,
add
the
seasonings
and when it turns golden
add
curry leaves
,
cashew nuts
broken
red chillies
and
cut
green chillies
.
7.
Fry
and
add
to
Rice
.
8.
Boil
pomegranate
juice for two minutes, then
add
rice
with the
seasonings
and
salt
.
9.
Keep
in a low flame till juice is absorbed completely.
10.
Serve
garnished with finely
cut
coriander leaves
.
