Pomegranate Rice

Ingredients

• • Rice - 1 cup
• • Pomegranate - 1
• • Green chillies - 4
• • Red chillies - 3
• • Cashew nuts - 1 tablespoon
• • Curry leaves - few
• • Oil - 2 tablespoons
• • Salt - as required
• • Coriander leaves - a few

Ingredients For Seasoning

• • Mustard seeds - ¼ teaspoon
• • Black gram dal - ½ teaspoon
• • Bengal gram dal - ½ teaspoon

Method

• 1. Cook rice till each grain is separate.
• 2. Allow it to cool.
• 3. Peel pomegranate and take out the seeds.
• 4. Crush it, or put in a mixie and extract juice from it.
• 5. Strain and remove the seeds.
• 6. Heat oil, add the seasonings and when it turns golden add curry leaves, cashew nuts broken red chillies and cut green chillies.
• 7. Fry and add to Rice.
• 8. Boil pomegranate juice for two minutes, then add rice with the seasonings and salt.
• 9. Keep in a low flame till juice is absorbed completely.
• 10. Serve garnished with finely cut coriander leaves.
