Pineapple Rawa Pongal

Ingredients
•
Bombay rawa
- 1 cup
•
Green gram dal
- ¼ cup
•
Sugar
- 1 cup
•
Pineapple slices (finely chopped)
- 3
•
Pineapple syrups
- ½ cup
•
Lemon yellow colour (food colour)
- 2 pinches
•
Coconut milk
- 2 cups
•
Ghee
- 2 tablespoons
•
Pistachios (finely cut)
- as required
•
Saffron (soaked in little warm milk)
- as required
Method
1.
Fry
rawa
using one teaspoon of
ghee
, until light golden.
2. Dry
roast
green gram dal
separately.
Add
1 cup of
water
to the
dal
and
cook
until it splits.
3.
Heat
coconut milk
add
roasted
rawa
and
mix
gently.
4.
Cover
and
cook
under low flame until
rawa
gets cooked.
5.
Heat
sugar
and
pineapple syrup
together until
sugar
melts.
6.
Mix
it with cooked
dal
.
7.
Add
yellow
colour
, finely chopped pineapple pieces and
mix
well.
8. When
rawa
is cooked properly
add
this pineapple mixed
sugar
syrup
. Allow to
cook
for few more minutes in low flame.
9.
Heat
remaining
ghee
,
fry
pistachio
and
mix
with pongal.
Add
soaked
saffron
to the pongal, and
mix
well.
10.
Serve
and enjoy!
