Palm Sugar Pongal

Ingredients
•
Rice (raw)
- 1 cup
•
Bengal gram dal
- ¼ cup
•
Green gram dal
- ¼ cup
•
Water
- 6 cups
•
Palm sugar
- 2 ½ cups
•
Milk
- 1 cup
•
Coconut (grated, fresh)
- ¼ cup
•
Cardamom powder
- ½ teaspoon
•
Ghee
- 2 tablespoons
•
Cashew nuts (broken)
- 10
Method
1.
Heat
6 cups of
water
in a broad .vessel.
2. When it starts
boiling
add
little
ghee
and washed
bengal gram dal
.
3. When it is half cooked,
add
green gram dal
.
4. Allow the
dal
to
cook
properly and then
add
washed
rice
.
Cover
and
reduce
the flame.
5. When
rice
is ¾ th cooked
add
milk
,
coconut
and
palm sugar
.
6.
Reduce
flame and
mix
well, until proper consistency is reached.
7.
Fry
cashew nuts
in
ghee
.
Pour
on top of the pongal.
Add
cardamom powder
and
mix
well.
8.
Serve
hot.
