Palak Dhaniya Ka Shorba

Ingredients
•
Spinach/Palak (chopped)
- 4 cups
•
Coriander leaves (fresh)
- 2 tablespoons
•
Green chillies
- 3
•
Milk
- 1 cup
•
Black pepper (freshly ground)
- 1 teaspoon
•
Lemon juice
- 1 teaspoon
•
Salt
- as required
•
Ghee
- 1 tablespoon
•
Garlic (crushed)
- 1 tablespoon
•
Ginger (julienned for garnishing)
- 1 tablespoon
•
Cream (fresh, for garnishing)
- 1 teaspoon
Method
1.
Boil
2 cups of
water
in a sauce pan.
Add
spinach
.
Cook
for 3 minutes.
Keep
aside.
2.
Blend
spinach
,
coriander leaves
and
green chilly
into a smooth purée.
3. Transfer the purée into a sauce pan.
Add
milk
and bring to a
boil
.
4.
Add
salt
,
black pepper
powder
and
lemon juice
.
Mix
well and
keep
aside.
5.
Heat
the
ghee
in a small pan.
Add
garlic
and sauté until golden brown.
6.
Add
the fried
garlic
to the
spinach
mixture
.
Mix
well.
7.
Serve
with
ginger
julienne and fresh
cream
.
