Onion Tomato Sauce Pulao

Ingredients
•
Basmati rice
- 1 cup
•
Peas (fresh)
- ½ cup
•
White onions
- 4
•
Aniseeds
- ¼ teaspoon
•
Cloves
- 3
•
Cinnamon
- 1 inch piece
•
Tomato sauce
- 1 ½ tablespoons
•
Cheese (grated)
- 1 tablespoon
•
Salt
- as required
•
Green chillies
- 2
•
Red chilly powder
- ½ teaspoon
•
Cashew nuts
- 1 tablespoon
•
Ghee/Oil
- 3 tablespoons
Method
1.
Wash
and
soak
rice
for 10 minutes.
2.
Cut
two
onions
lengthwise.
3.
Dice
other two
onions
into l inch cubes and blanch in
hot water
to which little
salt
is added.
4. After 10 minutes squeeze
onions
from
water
and
keep
separately.
5. Mince
green chillies
.
6.
Cook
peas
separately.
7.
Heat
oil
in a heavy vessel or pressure pan and
fry
masala
spices
with
onions
. (Which is
cut
lengthwise)
8.
Mix
chilly
paste
and
rice
.
9.
Fry
for two minutes.
10.
Pour
two cups of
boiling
water
with enough
salt
.
11.
Cover
and pressure
cook
in low flame.
12. After
removing
lid
add
chilly
powder
,
tomato sauce
, blanched
onions
and cooked
peas
.
13.
Mix
gently and
keep
on low fire for another two minutes.
14.
Serve
hot garnished with crisp (fried)
onion
rings, grated
cheese
, and fried
cashew nuts
.
