Onion Tomato Kuzhambu

Ingredients

• • Tomato - ¼ kg
  info: thin skinned sour tomatoes
• • Onions (big) - 2
• • Garlic - 4 flakes
• • Curry leaves (for garnishing) - 1 sprig
• • Oil - 1 tablespoon
• • Salt - as required

Ingredients For Seasoning

• • Mustard seeds - ½ teaspoon
• • Urad dal - 1 teaspoon

Ingredients For Grinding Together

• • Red chillies - 8
• • Coriander seeds - 2 teaspoons
• • Aniseeds - ½ teaspoon
• • Ginger - ½ inch piece
• • Garlic - 3 flakes
• • Cashew nuts - 10
• • Poppy seeds (dry roast separately) - 1 tablespoon
• • Coconut (grated, fresh) - ½ cup

Method

• 1. Fry the "For Grinding together" ingredients in little oil and grind with ½ cup grated fresh coconut.
• 2. Dice tomatoes into big pieces. (discard green portions if any)
• 3. Peel garlic, onion and slice lengthwise.
• 4. Heat oil, add seasonings, garlic and then onions.
• 5. Fry till transparent.
• 6. Add ground paste, salt, diced tomatoes with enough water and cook till tomatoes become soft.
• 7. Garnish with curry leaves.
