Mugalai Vegetable Pulao

Ingredients
•
Basmati rice
- 1 cup
•
Carrots (cut into long pieces)
- ¼ cup
•
Beans (cut into long pieces)
- ¼ cup
•
Fruits (diced, fresh, pineapple, ripe mango and apple)
- ½ cup
•
Cashew nuts
- 2 teaspoons
•
Raisins
- 2 teaspoons
•
Butter
- 1 tablespoon
•
Ghee/Oil (for frying)
- as required
•
Cloves
- 2
•
Cardamoms
- 2
•
Cinnamon
- 1 inch piece
•
Salt
- as required
Ingredients For Grinding Together
•
Coconut (fresh, grated)
- 1 tablespoon
•
Cashew nuts
- 1 tablespoon
•
Poppy seeds
- ½ tablespoon
•
Garlic
- 4 flakes
•
Green chillies
- 6
•
Ginger
- ½ inch piece
•
Coriander seeds
- 1 ½ teaspoons
Method
1.
Cook
rice
and allow it to cool.
2. Separate the grains.
3.
Cook
beans
and
carrots
separately.
4.
Heat
oil
,
add
masala
spices
and then ground
masala
.
5.
Fry
till raw smell goes in medium flame.
6.
Add
beans
and
carrots
.
7.
Stir
in
rice
and
fry
for few minutes.
8.
Remove
from
heat
and
add
diced
fruits
.
9.
Fry
cashew nuts
and
raisins
in
ghee
and
pour
over.
10.
Mix
butter
and
serve
hot.
