Mixed Vegetable Sambar - Karnataka Style

Tamarind extract (thick)
- ¼ cup

Thuar dal (cooked)
- ½ cup
•
Salt
- as required
•
Mustard seeds
- ½ teaspoon
•
Jaggery
- as required
Ingredients For Grinding Together
•
Coriander seeds
- 1 tablespoon
•
Red chillies
- 8
•
Bengal gram dal
- 2 teaspoons
•
Fenugreek
- ¼ teaspoon
•
Poppy seeds
- 2 teaspoons
•
Cinnamon
- 1 inch piece
•
Cloves
- 2
•
Coconut (grated)
- ¼ cup
•
Tomatoes (chopped)
- ¼ cup
Method
1.
Fry
the "For
Grinding
together"
spices
in little
oil
and
grind
with ¼ cup grated fresh
coconut
and chopped
tomatoes
to smooth
paste
.
2.
Cut
all the
vegetables
into 2 inch long pieces.
3.
Heat
little
oil
,
add
mustard seeds
to splutter,
add
small
onions
and
fry
for few minutes.
4.
Add
vegetables
one by one according to its
frying
time and
stir
for few minutes.
5.
Pour
diluted
tamarind extract
and
cook
till
vegetables
become tender.
6.
Mix
ground paste
, mashed
dal
,
salt
,
jaggery
and
cook
till gravy comes to desired consistency.
