Mixed Vegetable Raita

Ingredients

Carrots (chopped)
- 1 tablespoon
•
Onions (chopped)
- 1 tablespoon
•
Cauliflowers (chopped)
- 1 tablespoon
•
Cucumbers (chopped)
- 1 tablespoon
•
Capsicums (chopped)
- 1 tablespoon
•
Peas (boiled)
- 1 tablespoon
•
Coriander leaves
- a few
•
Green chillies
- 2
•
Salt
- as required
•
Curd
- 2 cups
Method
1. Blanch whole
carrot
in
hot water
for few minutes.
2.
Dice
finely.
3.
Cut
onions
,
cauliflower
,
cucumbers
and
capsicum
as finely as possible.
4.
Mix
everything with boiled
peas
and finely
cut
coriander leaves
.
5.
Chop
green chillies
into two.
6.
Add
salt
and
mix
thick beaten
curds
.
7. Chill and
serve
.
