Mixed Vegetable Masala Bhath

Ingredients

Rice
- 1 cup

Red gram dal/Thuar dal
- 1 cup
•
Tamarind
- medium lemon size
•
Oil
- ¾ tablespoon
•
Ghee
- 1 ½ tablespoons

Salt

Curry leaves

Cashew nuts (fried, for garnishing)

Drumstick leaves
- 3 tablespoons
•
Coconut (grated, fresh)
- 2 tablespoons

- 1 teaspoon

Method
1.
Peel
onions
and
cut
all the other
vegetables
into 1 ½ inch pieces.
2. Slit
green chillies
into two.
3.
Grind
and
keep
the
masala
paste
separately.
4.
Soak
tamarind
in
water
and extract juice.
5. Place a pressure cooker on fire,
add
one cup of
water
with ¼ cup of
dal
.
6. Close the lid and
cook
till it is just soft.
7. In the mean time
heat
oil
separately and
fry
green chillies
,
brinjals
,
banana
,
potato
,
drumstick
,
cluster bean
and
carrots
, when it is three fourth cooked
add
peeled
onions
and
drumstick leaves
.
8.
Fry
for another two minutes.
9.
Add
ground
masala
paste
and
fry
till good smell comes and
remove
from fire.
10. When the
dal
is cooked,
remove
the lid,
add
these fried
vegetables
,
cut
mangoes
, scraped
coconut
and
tamarind
extract with three cups of
water
.
11.
Add
enough
salt
, when it starts
boiling
add
washed
rice
, close the lid and pressure
cook
for 7 to 10 minutes in low flame.
12.
Heat
a Teaspoon of
ghee
,
tamper
with mustard
seeds
, black
gram
dal
and
curry leaves
.
13.
Mix
with
rice
and
serve
hot Garnish with fried
cashew nuts
and
serve
with
potato
chips.
