Milagu Kuzhambu

Ingredients For Grinding
•
Gingelly oil/Sesame seed oil
- 2 teaspoons
•
Hing
- 1 inch
•
Tur dal
- 1 teaspoon
•
Urad dal
- 1 teaspoon
•
Red chillies
- 5
•
Cumin seeds
- 1 teaspoon
•
Whole black pepper
- 2 teaspoons
•
Coriander seeds
- 2 teaspoons
•
Tamarind (small lemon sized ball)
- 1
•
Salt
- as required
Ingredients For Kuzhambu
•
Turmeric powder
- ½ teaspoon
Ingredients For Seasoning
•
Gingelly oil/Sesame seed oil
- 2 tablespoons
•
Mustard seeds
- 1 teaspoon
•
Fenugreek seeds
- ½ teaspoon
•
Red chillies
- 2
•
Curry leaves
- 1 sprig
Method
1.
Soak
tamarind
in
hot water
and
keep
aside.
2.
Heat
gingelly oil
in a pan.
Add
hing
and
fry
until it puffs slightly.
Add
tur dal
,
urad dal
,
red chilly
,
cumin seeds
,
whole black pepper
and
coriander seeds
.
Fry
well.
3.
Grind
roasted
ingredients
, soaked
tamarind
and
salt
into a fine
paste
.
4.
Add
grounded
paste
into a saucepan.
Add
water
and
turmeric powder
.
Mix
well.
Keep
aside.
5.
Heat
gingelly oil
in a pan.
Add
mustard seeds
,
fenugreek seeds
and
red chilly
.
Fry
until the
mustard seeds
stop spluttering and
fenugreek
becomes golden brown.
6.
Add
this fried
seasoning
ingredients
into the kuzhambu.
Add
curry leaves
.
Mix
well.
7.
Serve
with hot steamed rice and a
vegetable
curry
.
