Methi Sambar

Ingredients

• • Garlic - 10 flakes
• • Tamarind extract (thick) - 5 tablespoons
• • Salt - as required
• • Curry leaves - 1 sprig
• • Sugar/Jaggery - as required (optional)

Ingredients For Frying In Oil And Grinding Together

• • Fenugreek seeds - 1 teaspoon
• • Red chillies - 6
• • Pepper - 1 teaspoon
• • Garlic - 8 flakes
• • Onion - ½
• • Asafoetidas - a pinch
• • Coconut (grated, fresh) - 1 tablespoon

Method

• 1. Heat oil, season with mustard seeds and fry garlic, curry leaves.
• 2. Add tamarind extract, salt, water and ground paste.
• 3. Boil till raw flavour is lost.
