Melon Seed Payasam

Ingredients

• • Melon seeds (dehusked) - 1 cup
• • Sugar - 1 cup
• • Milk - ½ cup

Method

• 1. Wash and rub the seeds over rough surface sprinkling little water and rice flour. (This removes outer green skin).
• 2. Wash well with water.
• 3. Grind to smooth paste sprinkling enough water.
• 4. Mix with milk, sugar and heat in a heavy deep curved pan.
• 5. Do not stir in circular motion.
• 6. Stir once or twice in between from down to up gently. {To prevent burning underneath)
• 7. Keep in reduced flame till it curdles and gets a shine. (Till raw smell is gone)
