Melon Seed Payasam

Ingredients
•
Melon seeds (dehusked)
- 1 cup
•
Sugar
- 1 cup
•
Milk
- ½ cup
Method
1.
Wash
and rub the
seeds
over rough surface sprinkling little
water
and rice flour. (This removes outer green skin).
2.
Wash
well with
water
.
3.
Grind
to smooth
paste
sprinkling enough
water
.
4.
Mix
with
milk
,
sugar
and
heat
in a heavy deep curved pan.
5. Do not
stir
in circular motion.
6.
Stir
once or twice in between from down to up gently. {To prevent burning underneath)
7.
Keep
in reduced flame till it curdles and gets a shine. (Till raw smell is gone)
