Ingredients

Basmati rice
- 1 cup
•
Potatoes
- 2
•
Onions
- 2
•
Carrots
- 2
•
Shelling peas
- ¼ cup
•
Beans (diced)
- ¼ cup
•
Knol khol
- 1
•
Brinjals
- 2
•
Red chilly powder
- ½ teaspoon
•
Turmeric powder
- ¼ teaspoon
•
Garam masala powder
- ¼ teaspoon
•
Bay leaf
- 1
•
Salt
- as required
•
Oil/Ghee (for frying)
- as required
•
Mint leaves (for garnishing)
- as required
•
Lemon juice
- as required
Ingredients For Grinding Together
•
Coconut (dry)
- 2 tablespoons
•
Coriander seeds
- 1 teaspoon
•
Cumin seeds
- 1 ½ teaspoons
•
Garlic
- 4 flakes
•
Ginger
- 1 inch piece
•
Green chillies
- 4
Method
1.
Wash
and
soak
rice
for 10 minutes.
2.
Slice
onions
and
brinjals
.
3.
Cut
and steam other
vegetables
till soft.
4.
Heat
oil
in pressure pan.
5.
Add
bay leaf
and then
onions
and
brinjals
.
6.
Fry
for few minutes and
add
masala
paste
.
7.
Fry
till good smell comes.
8.
Add
rice
and
stir
continuously for few minutes in medium flame.
9.
Mix
other
vegetables
salt
,
chilly
powder
,
turmeric powder
and
garam masala powder
.
10.
Pour
two cups of
boiling
water
.
11.
Mix
gently and close the lid.
12.
Reduce
flame and pressure
cook
for 10 to 12 minutes.
13.
Serve
hot garnished with finely
cut
coriander
leaves
and
mint leaves
.
14. Squeeze
lemon juice
if necessary.
