Mango Sweet Pongal

Ingredients
•
Rice (raw)
- 1 cup
•
Thickened milk
- 1 ½ cups
•
Mango juice (fresh)
- 1 ½ cups
•
Ghee
- 2 tablespoons
•
Sugar
- 1 cup
•
Almonds (fried)
- as required
•
Kismis
- 2 teaspoons
•
Cardamom powder
- 2 pinches
•
Saffron (soaked in warm milk)
- as required
•
Cream (fresh)
- 2 tablespoons
Method
1.
Wash
rice
and
add
milk
,
mango
pulp. Pressure
cook
with weight for 6 whistles.
2.
Mix
sugar
with
water
and
heat
till it reaches soft ball consistency.
3.
Add
cooked
rice
,
stir
gently until moisture evaporates.
4.
Add
fresh
cream
and soaked
saffron
.
5.
Keep
under low flame for few more minutes.
6.
Fry
almond
and
kismis
in a tablespoon of
ghee
.
Keep
separately for
garnishing
.
7.
Add
remaining
ghee
to the pongal before
removing
from fire.
8. Transfer this to a
serving
plate. Garnish with fried
almonds
and
kismis
.
