Mango Ginger Tamarind Pickle

Mango ginger
- 1 cup
•
Tamarind
- lime size
•
Salt
- as required
•
Jaggery
- 2 tablespoons
•
Chilly powder
- 2 tablespoons
Ingredients For Seasoning
•
Mustard seeds
- 1 teaspoon
•
Asafoetidas
- a pinch
Ingredients For Dry Roasting
•
Fenugreek
- 1 teaspoon
Method
1.
Scrape
outer skin and
cut
ginger
into thin rounds.
2.
Cook
in thin
tamarind
extract for 5 to 10 minutes.
3.
Add
salt
,
jaggery
and
chilly powder
at the end.
4.
Heat
oil
separately
add
mustard seeds
,
asafoetida
and
add
to the pickle.
5. Dry
roast
fenugreek
and
powder
it.
6.
Add
to the pickle after
removing
from fire.
