Lemon Rice

Mustard seeds
- ½ teaspoon

Urad dal
- 1 teaspoon
•
Bengal gram dal
- 1 teaspoon
•
Peanuts
- 1 tablespoon
•
Cashew nuts (broken)
- 1 tablespoon
•
Red chillies
- 2
•
Curry leaves
- 1 sprig
•
Turmeric powder
- ½ teaspoon
•
Rice (cooked)
- 1 cup
•
Carrots (shredded)
- ½ cup
•
Lemon juice
- 1 tablespoon
•
Salt
- as required
•
Sesame oil
- 1 tablespoon
Method
1.
Heat
oil
in a pan,
add
mustard seeds
,
urad dal
and bengal
dal
.
2. After the
mustard seeds
start
spluttering,
add
peanuts
,
cashew nuts
,
red chilly
,
curry leaves
and
turmeric powder
.
Remove
from
heat
when the nuts starts to turn golden brown.
3. In a bowl,
add
cooked
rice
, the fried items, shredded
carrots
,
lemon juice
,
salt
and
sesame oil
.
Mix
well.
4.
Serve
with raita and
curries
. Enjoy!
