Lemon Green Chilly Pickle

Ingredients

Lemons
- 50
•
Ginger
- ½ kg
•
Green chilly (long)
- 1 kg
•
Rock salt
- 1 ½ cups
•
Turmeric powder
- 1 tablespoon
•
Coconut oil
- ¼ cup
Method
1. Dry
roast
salt
slightly and
powder
it in a mixie. (Colour should not change)
2.
Wash
lemon
,
ginger
,
chilly
well and
spread
over a cloth to
remove
excess moisture.
3.
Heat
coconut oil
in a broad pan, put whole
lemon
and
fry
in reduced flame, till it smells good.
4.
Remove
from fire, allow to cool, and
cut
lemon
into 8 pieces.
5.
Scrape
outer skin of
ginger
and
cut
into thin rounds.
Remove
the stem from
green chilly
and
keep
aside.
6.
Keep
the empty jar under hot sun to dry it well.
7. Put ¼ portion of the measured
salt
in the jar.
8.
Mix
½ portion of the
salt
with
lemon
,
green chilly
, and
ginger
.
9.
Spread
this on top of the
salt
in the jar.
10. Sprinkle remaining ¼ of the
salt
.
11. Tie a clean cloth on top of the jar.
12.
Mix
well everyday for 10 days. Use after it is soaked well.
