Lemon - Dates Pickle

Ingredients

Lemons
- 15
•
Date (seedless)
- 50 grams
•
Rock salt
- 3 tablespoons
•
Oil
- ¼ cup
•
Mustard
- ½ teaspoon
•
Sugar
- ½ cup
Ingredients For Grinding Together With Vinegar

Red chillies
- 8
•
Garlic
- 3 flakes
•
Fenugreek
- ¼ teaspoon
•
Mustard seeds
- ¼ teaspoon
•
Vinegar
- 2 tablespoons
Method
1. Select thin skinned and firm ripe
lemon
.
Wash
, wipe and
spread
on a cloth to
remove
excess moisture.
2.
Cut
into small squares.
3.
Add
rock salt
,
mix
well and put it in a bottle.
4.
Mix
it once everyday for 15 days.
5.
Chop
dates
into small pieces.
6.
Mix
sugar
with little
water
and
keep
it on a stove in reduced flame.
Stir
well until it dissolves completely.
7.
Remove
from fire,
add
dates
and
ground paste
.
8.
Mix
it with
lemon
pieces.
9.
Heat
oil
in a pan
add
mustard
, allow to splutter and
pour
over the pickle.
Mix
well.
10.
Store
it in a dry bottle. This pickle stays good for 6 months.
Note
• Those who need more sweetness can
add
1 cup
sugar
instead of using ½ cup
sugar
to
prepare
this pickle.
