Ladies Finger Gravy

Ladies finger
- ¼ kg
•
Tamarind
- lemon size
•
Salt
- as required
•
Jaggery
- as required
(optional)
•
Oil (for seasoning)
- as required
•
Mustard seeds
- ¼ teaspoon
•
Fenugreek
- ¼ teaspoon
•
Curry leaves
- 1 sprig
Ingredients For Grinding Together
•
Coconut (grated, fresh)
- 3 tablespoons
•
Garlic
- 4 flakes
•
Red chillies
- 8
•
Coriander seeds
- 1 tablespoon
Method
1.
Wash
and
cut
ladies finger
into 2 inch long pieces.
2.
Fry
with a table spoon of
oil
for few minutes till raw flavour is lost.
3.
Add
thin
tamarind
extract and
cook
till soft.
4.
Add
ground paste
,
salt
,
jaggery
and
cook
for few more minutes.
5.
Heat
little
oil
,
add
seasoning
,
curry leaves
and
mix
with the gravy.
6.
Serve
hot with cooked rice.
