Khova Bhath

Ingredients

• • Basmati rice - 250 grams
• • Sugar (powdered) - ¾ cup
• • Plain khovum - 75 grams
• • Raisins - 1 tablespoon
• • Cashew nuts - 1 ½ tablespoons
• • Almonds - 1 tablespoon
• • Saffron - a pinch
• • Rose water - 1 tablespoon
• • Pure ghee - 2 tablespoons
• • Silver warqs - as required

Method

• 1. Wash and soak rice for 10 minutes.
• 2. Cook in enough water till soft.
• 3. Drain water and allow it to cool.
• 4. Then mix crumbled khova and powdered sugar to the rice.
• 5. Dissolve saffron in l Tablespoon of warm milk.
• 6. Blanch almonds in hot water, remove outer skin and slice thinly.
• 7. Cut cashew nuts also into thin strips.
• 8. Heat ghee and fry cashew nuts, almonds and raisins.
• 9. Add rice mixture with saffron milk and mix in a low flame till moisture is absorbed.
• 10. Before removing from fire sprinkle rose water, mix well and invert on a serving dish.
• 11. Decorate with silver warq.
