Kerala Egg Noodles

Ingredients
•
Flat noodle
- 300 grams
•
Eggs
- 6
•
Onions
- 3
•
Potatoes
- 2
•
Tomatoes
- 4
•
Peas
- ¼ cup
•
Carrots
- 2
•
Oil
- 3 tablespoons
•
Tomato ketchup
- 1 ½ tablespoons
•
Green chillies (prepare: make into paste)
- 7
•
Ginger
- ½ inch
•
Coriander leaves (ground to paste)
- 1 tablespoon
•
Tabasco sauce
- 1 tablespoon
•
Salt
- as required
•
Cumin seeds (for seasoning)
- as required
Method
1.
Heat
water
to which little
salt
and 1 teaspoon of
oil
is added.
2. When it starts
boiling
,
add
noodles
.
3. When it is cooked
drain
water
.
4.
Pour
little
cold water
on top and
drain
again.
5. This makes the
noodles
to separate easily.
6.
Heat
oil
in a pan and season with
cumin seeds
.
7.
Fry
onions
and then other
vegetables
which are
cut
into long thin pieces.
8.
Boil
peas
separately and
add
to it.
9. When the
vegetables
become soft,
add
ginger
chilly
paste
,
coriander
paste
,
fry
for 1 or 2 minutes,
add
tomatoes
and
fry
till it becomes soft.
10.
Add
ketchup
,
tabasco sauce
and enough
salt
and sugar.
11.
Mix
well,
add
well drained
noodles
, and
fry
over a high flame till it is mixed well.
12. Beat
eggs
with
seasoning
,
make
omelettes,
cut
into thin strips,
mix
with
noodles
before
removing
from fire.
