Keerai Rice

Ingredients

Rice
- 1 cup
•
Onions
- 2
•
Mixed greens (finely cut, amaranth, arai keerai & siru keerai)
- 3 cups
•
Green chillies
- 2
•
Pea nuts (roasted)
- 1 tablespoon
•
Lemon
- 1
•
Oil
- 3 tablespoons
•
Coconut (grated)
- 1 teaspoon
Ingredients For Seasoning
•
Mustard seeds
- ¼ teaspoon
•
Cumin seeds
- ¼ teaspoon
•
Black gram dal
- 1 teaspoon
•
Bengal gram dal
- 1 teaspoon
•
Cashew nuts
- a few
(optional)
Ingredients For Masala Powder
•
Coriander seeds
- 1 ½ teaspoons
•
Black gram dal
- 1 teaspoon
•
Fenugreek
- ¼ teaspoon
•
Bengal gram dal
- 1 teaspoon
•
Red chillies
- 5
•
Asafoetida powder
- a pinch
Method
1.
Fry
the "For
masala
powder
"
spices
in half a Teaspoon of
oil
and
powder
.
2.
Cook
rice
till each grain is separate.
3. Allow it to cool completely.
4.
Cut
onions
into small pieces.
5. Clean
greens
,
remove
stems
wash
and then chopped.
6.
Heat
oil
,
fry
seasonings
and then with
cut
green chillies
.
7.
Add
onions
and
fry
for two minutes.
8. Continue
frying
with
greens
till it shrinks and raw flavour goes from it.
9.
Add
cooled
rice
,
salt
,powdered
spices
,
pea nut
powder
and
mix
well in high flame till everything is mixed well.
10.
Add
grated fresh
coconut
,squeeze
lemon
,
mix
well and
serve
with curd raita.
