Jackfruit Sweet Pongal

Ingredients
•
Rice
- 1 cup
•
Milk
- 5 cups
•
Jackfruits (finely chopped)
- ¾ cup
•
Sugar
- ¾ cup
•
Ghee
- 2 tablespoons
•
Cardamom powder
- ½ teaspoon
•
Saffron (soaked in hot milk for 1 hour)
- a pinch
•
Cashew nuts (fried)
- as required
•
Kismis (fried)
- as required
Method
1.
Boil
milk
diluted with 1 cup of
water
. When it starts
boiling
add
washed
rice
.
Cook
until
rice
becomes soft.
2.
Fry
jack
fruit
using little
ghee
.
3. When
rice
is cooked well
add
sugar
, fried jack
fruit
,
saffron
and
cardamom powder
.
Mix
well.
4.
Reduce
flame. Allow to
cook
well, until required consistency is reached.
5. Garnish with fried
cashew nuts
and
kismis
.
6. While
serving
pour
little
ghee
on top of the pongal.
