Jackfruit Appam

Ingredients
•
Wheat flour
- 1 cup
•
Jack fruits (ripe, finely chopped)
- ½ cup
•
Salt
- a pinch
•
Jaggery (grated)
- ¾ cup
•
Cardamom powder
- ½ teaspoon
•
Oil/Ghee mixed together -s (for frying)
- as required
Method
1.
Cook
jack fruit
in ½ cup of
water
until soft and then
mash
it, properly.
2.
Add
jaggery
, allow to
melt
and
remove
from fire.
3.
Add
salt
,
cardamom powder
,
wheat flour
and
mix
well.
4. Allow to cool sprinkle
water
if necessary and knead the dough well.
Prepare
small balls. Flatten it with hands over a greased plastic sheet.
5.
Heat
oil
or ghee in a small deep kadai.
6. Transfer appam in the centre of the
oil
, gently.
7. When it comes up, gently turn over.
8.
Remove
when it is still soft. (Do not allow the appam to become crisp.)
9. After deep
frying
spread
the appams over absorbant kitchen paper to
remove
excess
oil
.
10. Arrange on a flat broad plate side by side. Allow to cool, and then
keep
it in an air
-
tight container.
Serve
or use it on the same day.
