Jack Fruit Pulao

Ingredients
•
Basmati rice
- 1 cup
•
Jack fruit pieces (finely diced)
- ¾ cup
•
Sugar (powdered)
- ¾ cup
•
Honey
- 1 tablespoon
•
Pure ghee
- 3 tablespoons
•
Cream (fresh)
- 1 ½ tablespoons
•
Cardamom powder
- a pinch
•
Cashew nuts
- 1 tablespoon
•
Raisins
- 1 tablespoon
•
Vanilla essence
- few drops
Method
1.
Wash
and
soak
rice
for 10 minutes.
2.
Strain
.
3.
Boil
two cups of
water
in a heavy vessel and
cook
rice
in that separately in a low flame.
4.
Keep
closed and do not disturb in between.
5. After 7 to 10 minutes, when
rice
is cooked and moisture is evaporated
add
powdered
sugar
,
jack fruit pieces
, colour and half of the
ghee
.
6.
Mix
gently and
keep
in reduced flame.
7. After a few minutes
add
honey
, fresh
cream
and
cardamom powder
.
8.
Remove
from fire.
9.
Heat
rest of the
ghee
,
fry
cashew nuts
raisins
.
10.
Pour
over
rice
.
11.
Serve
hot.
