How to make Tomato Sauce

Ingredients
•
Ghee/Cooking oil
- 2 tablespoons
•
Cardamom pods
- 6
•
Bay leaves
- 2
•
Cinnamon sticks
- 2
•
Tomato sauce/Puree
- 500 grams
•
Kashmiri chilly paste
- 2 teaspoons
Method
1.
Heat
a small saucepan over a medium
heat
and
pour
the
ghee
.
Add
the
cardamom pods
,
bay leaves
and
cinnamon sticks
into the
ghee
and allow them sizzle and crackle for a minute.
2.
Pour
the
tomato sauce
into the saucepan, and
add
the
chilly
paste
and
stir
to bled.
Keep
the
heat
to medium-low,
cover
the pad, and
simmer
.
Stir
often until an oily
layer
forms on the surface and around the edges for 15 to 20 minutes.
3. Take off the
sauce
pan from the fire and discard the cardamom,
bay leaves
and
cinnamon
using a spoon or strainer and allow it to cool.
4.
Store
the
paste
in a tightly sealed container in the refrigerator for upto 2 weeks or in the freezer for up to 2 months.
