Hearty Mutton Stew

Ingredients

Mutton (leg portion)
- 500 grams
•
Pearl onion (peeled)
- 100 grams
•
Carrots (cubed)
- 3
•
French beans (cut into 1 inch pieces)
- 8
•
Potatoes (peeled & cubed)
- 4
•
Capsicums (cubed)
- 2
•
Butter
- 3 tablespoons
•
Onions (chopped finely)
- 2
•
Garlic (finely chopped)
- 1 teaspoon
•
Flour
- 1 tablespoon
•
Tomato puree
- 2 tablespoons
•
Black pepper powder
- 1 teaspoon
•
Cumin seeds
- 1 teaspoon
•
Parsley (dry)
- 1 teaspoon
•
Salt
- as required
Method
1.
Heat
butter
in a heavy bottomed saucepan and
add
the chopped
onions
& the
mutton
.
2. Saute over medium
heat
until browned.
3.
Add
the chopped
garlic
,
flour
,
black pepper powder
, jeera and
tomato puree
.
4.
Add
5 cups of
water
,
cover
&
simmer
until
mutton
is half cooked.
5.
Add
all the
vegetables
except the
capsicums
.
Cover
&
simmer
until
mutton
&
vegetables
are tender.
6.
Add
the
capsicums
,
cook
for another 10 minutes.
7.
Serve
hot with boiled rice or toast. This makes a complete meal.
