Grilled Egg Toast

Ingredients

Bread slices (toasted)
- 8

Eggs (hard boiled, chopped into small pieces)
- 3
•
Cheese (grated)
- 1 cup
•
Salt
- as required
•
Pepper
- as required
•
Dhania/Coriander leaves (fresh, chopped)
- 1 tablespoon
•
Tomato (chopped)
- 1
Ingredients For White Sauce
•
Salted butter
- 2 tablespoons
•
Maida
- 3 tablespoons
•
Milk
- 1 cup
•
Salt
- as required
•
Pepper
- as required
Method
1.
Prepare
the white sauce by
melting
butter
in a heavy bottomed pan.
2.
Add
maida
and
stir
for a minute.
3.
Add
the
milk
,
stirring
continuously.
4.
Cook
,
stirring
continuously till thick.
5.
Add
salt
,
pepper
to
taste
.
6.
Remove
from fire and
keep
the white sauce aside.
7.
Mix
grated
cheese
,
tomato
, fresh
coriander
,
salt
and
pepper
to the white sauce.
8. Then gently
mix
the chopped
eggs
, taking care not to discolour the
mixture
by
mashing
the
egg
yolks.
9.
Spread
the
mixture
on the toasts and
grill
in a hot oven on the top rack for minute or till slightly brown.
10.
Serve
hot with ketchup.
11. The white sauce should not be too thick, but it should be of a
spreading
consistency.
