Garlic Kuzhambu

Ingredients

Garlic
- 3 cloves
•
Black pepper
- 1 ½ teaspoons
•
Onions (small, peeled)
- ½ cup
•
Dhania powder
- ¼ teaspoon
•
Tamarind (soaked & extracted)
- lime size
•
Salt
- as required
•
Jaggery
- as required
Ingredients For Seasoning
•
Fenugreek seeds
- ½ teaspoon
•
Mustard seeds
- ½ teaspoon
•
Asafoetidas
- ½ teaspoon
•
Curry leaves
- 1 sprig
Ingredients For Grinding Coarsely
•
Tomatoes
- 3
•
Onion (big)
- 1
Method
1. Separate
garlic
into flakes and
peel
.
2.
Soak
tamarind
in enough
water
and extract.
3.
Fry
pepper
in ghee and
crush
coarsely.
4.
Heat
Oil
in a
frying
pan,
add
seasonings
,
garlic
, small
onions
and crushed
pepper
.
5.
Fry
for few minutes,
add
dhania powder
, pound
mixture
and
fry
for few minutes.
6.
Add
tamarind
extract,
salt
,
jaggery
and
boil
till
oil
floats.
7.
Serve
with rice or idlis.
Note - Variations
•
Add
sliced brinjal or ladies finger instead of
garlic
.
