Fried Mutton Chops

Ingredients

Double lamb chops (large chops meant for frying)
- 8
•
Full cream milk
- 2 ½ cups
•
Ginger paste
- ¾ teaspoon
•
Saunfs/Fennel powder
- ½ teaspoon
•
Bay leaves/Tej pattas
- 2
•
Cloves/Laungs
- 4
•
Black peppercorns
- 10
•
Salt
- as required
•
Green cardamoms/Choti elaichis
- 4
Ingredients For Coating
•
Dahi/Curd
- ½ cup
•
Besan/Gram flour
- 1 ½ tablespoons
•
Chilly powder
- ½ teaspoon
•
Garam masala
- ½ teaspoon
•
Ginger paste
- ½ teaspoon
•
Garlic paste
- ½ teaspoon
•
Salt
- a little
•
Oil (for deep frying)
- as required
Method
1.
Boil
the
milk
,
adding
the
chops
,
ginger paste
,
saunf
powder
,
bay leaves
,
cloves
,
pepper
corns,
choti elaichi
&
salt
until half the quantity of
milk
remains.
2.
Simmer
until the
milk
has evaporated & the
chops
are just tender.
3.
Remove
the whole
spices
.
4. Beat the
dahi
with the
besan
,
chilly powder
,
garam masala
,
ginger paste
,
garlic paste
&
salt
to a smooth consistency.
5.
Heat
oil
in a
frying
pan.
Dip
the
chops
in the
dahi
mixture
&
fry
until golden brown.
6.
Serve
hot garnished with onion rings.
