Floating Island

Ingredients

1. Remove yolks from white carefully.
2. Add a pinch of salt to the whites and beat stiffly with powdered sugar.
3. It should form peaks after beating.
4. Boil milk in a flat dish, simmer, add a teaspoon of meringue (beaten egg white) cook till it sets, turn and cook till it is done.
5. Remove carefully and keep on a wet cloth, which is placed on a flat plate.
6. Use up all the meringue and keep separately.
7. Beat egg yolks with little sugar and add it, to the remaining milk, (which is used to cook whites) and make custard by keeping inside a pan of boiling water (Double boiling).
8. Make a thick custard. Dissolve sugar after removing from fire.
9. For serving, pour little custard in small flat dishes, top with one meringue (cooked) and pour little.
