Fish Pie With Baked Cheese Custard

Ingredients

Fish (boiled and flaked)
- ½ kg
•
Onion (chopped)
- 1
•
Garlic (crushed & chopped)
- 3 flakes
•
Laungs/Cloves (crushed)
- 3
•
Salt
- as required
•
Pepper
- as required
•
Tomatoes (sliced)
- 2
•
Eggs (prepare: beaten well with a little salt & pepper)
- 2
•
Cheese (grated)
- 50 grams
•
Milk
- 1 cup
•
Butter
- 1 tablespoon
Ingredients For White Sauce
•
Butter
- 3 tablespoons
•
Maida
- 3 tablespoons
•
Milk
- 2 cups
•
Salt
- as required
•
Pepper
- as required
Method
1.
Boil
fish
by placing in a covered vessel with 1 cup
water
, a little
salt
and 1 bay
leaf
for 10 minutes on low flame after the first
boil
.
2.
Strain
and
keep
stock aside.
Debone
and flake the
fish
.
3.
Prepare
the white sauce by
melting
butter
in a heavy bottomed pan.
4.
Add
maida
and
stir
for a minute.
Add
the
milk
,
stirring
continuously.
5.
Cook
,
stirring
continuously till slightly thick.
6.
Add
salt
&
pepper
to
taste
.
Remove
from fire.
Keep
aside.
7.
Heat
1 Tablespoon
butter
,
add
onion
.
Cook
till transparent.
Add
garlic
and crushed
laung
.
8.
Add
fish
flakes.
Add
salt
&
pepper
to
taste
.
Cook
for 2 minutes.
9.
Remove
from fire and
spread
in an oven proof
serving
dish.
10.
Pour
hot white sauce over the
fish
covering
it well.
11. Arrange
tomato
slices on the white sauce and sprinkle some
pepper
.
12.
Pour
beaten
eggs
over the
tomato
slices.
13. Beat grated
cheese
with hot
milk
and
pour
over the
eggs
.
14. Dot with
butter
and
bake
in a preheated medium hot oven for about 30 minutes till the top turns golden brown.
