Egg Stuffed Appam

Ingredients

• • Rice (raw) - 1 cup
• • Par boiled rice - 1 cup
• • Urad dal - ¼ cup
• • Coconut - 1
• • Sugar - 3 tablespoons
• • Salt - as required
• • Eggs - 4
• • Soda-bicarbonates - ½ teaspoon

Method

• 1. Soak rice and dal together for 2 hours and grind into fine, thick paste with enough salt.
• 2. Grind previous day itself.
• 3. Next day grate one full coconut and take two extracts from it.
• 4. Add it to the dough a long with ½ Teaspoon of soda-bicarbonate and 3 teaspoons of sugar.
• 5. This dosa should be poured in a curved frying pan, and cooked on one side only.
• 6. Take a laddie full of dough, and pour into the pan which is greased well and hot, using a cloth or tongs turn the frying pan, so that the dough is spread evenly.
• 7. Cover on top and keep on a medium flame till it is cooked.

Method To Do Stuffing

• 1. Scramble eggs with desired seasonings and take a tablespoon full of it and put it inside the dosa, as soon as it is poured.
• 2. Pour little dough on top and allow to cook in a low flame.
• 3. There is no need to turn over.
• 4. This dosa is cooked on only one side.
