Easy Vegetable Crostini

Ingredients

Bread slices
- 4

Potatoes
- 2
•
Heavy cream
- 2 tablespoons
•
Salt
- as required
•
Cheddar cheese (shredded)
- 4 tablespoons
•
Red pepper (diced)
- 2 tablespoons
•
Olives (diced)
- 2 tablespoons
•
Oil
- 2 teaspoons
Method
1.
Peel
and
boil
potatoes
until soft.
2.
Heat
oil
,
add
potatoes
and
mash
with a masher.
3.
Add
heavy cream
and
salt
.
Cook
until the
mixture
is thick.
4. Using a cookie cutter,
cut
round shapes in the middle of the
bread slices
.
5.
Spread
the
potato
cream
mixture
on the round
bread slices
.
6.
Add
cheddar cheese
,
red pepper
&
olives
.
7.
Bake
in the oven or place in
grill
until
cheese
melts (10 minutes).
