Easy Creamy Avocado Pasta

Ingredients
•
Whole wheat spaghetti
- 250 grams
•
Olive oil
- 2 tablespoons
•
Salt
- as required
•
Avocados (ripe, cut into half with the skin and seed removed)
- 2
•
Basil (fresh)
- 5 sprigs
•
Parmesan cheese (shredded)
- 2 tablespoons
•
Lemon juice
- 1 teaspoon
•
Pepper
- ΒΌ teaspoon
•
Red pepper flakes
- a few
Method
1.
Boil
pasta until al dente about 7 minutes.
2.
Add
avocados
,
basil
,
lemon juice
, extra virgin
olive oil
,
parmesan cheese
,
salt
and
pepper
to a food processor.
3.
Grind
in a blender until its a thick and creamy
paste
.
4.
Drain
the pasta and drizzle with a little bit of
oil
. Place back into the pan the pasta was cooked in. (
Make
sure the pan has cooled down or the pasta will stick to the pan.)
5.
Add
and
mix
the
avocado
sauce with the cooked pasta and
serve
immediately.
6. Garnish with
red pepper flakes
,
parmesan cheese
and
basil
if desired.
