Crispy Potato Fingers

Ingredients
•
Oil
- 1 teaspoon
•
Semolinas
- ½ cup
•
Potatoes (boiled and mashed)
- 4
•
Green chillies (finely chopped)
- 3
•
Coriander leaves (finely chopped)
- ½ cup
•
Salt
- as required
•
Jeera
- ½ teaspoon
•
Oil (for deep-frying)
- as required
Method
1. Bring ½ cup of
water
to a
boil
in a sauce pan.
Add
1 teaspoon of
oil
.
2.
Add
½ cup of
semolina
.
Cook
on low
heat
for 2 to 3 minutes, until the
semolina
puffs up.
Remove
from
heat
.
3. In a bowl,
add
the cooked
semolina
, boiled
potatoes
(peeled, boiled & mashed),
green chilly
,
coriander leaves
,
jeera
and
salt
.
Mix
well into a fine dough.
4.
Roll
the dough into small finger sized pieces and
keep
aside.
5. In a sauce pan,
heat
oil
. Deep
fry
potatoes
fingers until they turn golden brown.
6.
Serve
immediately with chutney or ketchup. Enjoy!
