Cream Of Chicken Soup

Ingredients
•
Chicken stock
- 4 cups
•
Shredded chickens
- ¼ cup
•
Milk
- 1 cup
•
Butter
- 1 tablespoon
•
Plain flour/Maida
- 1 ½ tablespoons
•
Salt
- as required
•
Pepper
- as required
•
Cream (fresh, for garnishing)
- 4 tablespoons
•
Parsley/Coriander leaves
- as required
Method
1.
Prepare
chicken stock
as given on page 8.
2.
Mix
the
chicken stock
and
milk
and
keep
aside.
3.
Heat
butter
in a pan.
Add
the
flour
and
stir
on low
heat
for ½ minute.
4.
Add
stock
and
milk
mixture
. Bring to a
boil
,
stirring
continuously.
Cook
on low
heat
until the soup thickens.
5.
Add
shredded chicken
,
salt
and
pepper
.
Cook
for a minute.
6.
Serve
hot, garnished with fresh
cream
,
parsley
or
coriander
.
