Coriander Pulao

Ingredients

• • Basmati rice - 1 cup
• • Cinnamon - 1 inch piece
• • Cloves - 3
• • Cardamoms - 2
• • Onions - 2
• • Tomatoes - 2
• • Potatoes - 3
• • Peas - ¼ cup
• • Oil - 2 ½ tablespoons
• • Salt - as required

Ingredients For Grinding Together

• • Coriander leaves - 1 bunch
• • Ginger - ½ inch piece
• • Garlic - 4 flakes
• • Green chillies - 6
• • Cumin seeds - ½ teaspoon
• • Onions (small) - 8
• • Coconut (grated, fresh) - 1 ½ tablespoons

Method

• 1. Cut onions and tomatoes into 1 inch long pieces.
• 2. Peel and dice potatoes.
• 3. Cook peas.
• 4. Wash and soak rice for 5 to 10 minutes.
• 5. Heat oil in pressure cooker or pan and fry garam masala spices.
• 6. Add onions, fry for few minutes.
• 7. Continue frying with chopped tomatoes till it becomes soft.
• 8. Add potatoes and fry for few minutes.
• 9. Mix ground masala gently and fry in a medium flame till good smell comes.
• 10. When moisture is absorbed add soaked rice and fry for few more minutes.
• 11. Add enough salt and two cups of boiling water with peas.
• 12. Mix and close the lid.
• 13. Keep weight and pressure cook for 10 minutes in low flame.
