Coconut Rice

Ingredients

• • Rice (cooked) - 2 cups
• • Coconut (grated, fresh) - 1 cup
• • Salt - as required
• • Coriander leaves (finely cut) - 1 tablespoon

Ingredients For Seasoning

• • Coconut oil - 2 tablespoons
• • Mustard seeds - 1 ½ teaspoons
• • Bengal gram dal - 1 teaspoon
• • Urad dal - 1 teaspoon
• • Red chillies (broken) - 4
• • Curry leaves - 1 sprig
• • Green chillies (finely cut) - 1 ½ tablespoons
• • Peanuts (roasted) - 1 tablespoon
• • Cashew nuts (broken) - 1 tablespoon
• • Asafoetidas - a pinch
• • Sugar - 1 teaspoon

Method

• 1. Cook rice.
• 2. Allow it to cool completely.
• 3. Fry the seasonings in oil, add coconut at the end, and fry for a minute or two, add to the rice and mix well.
• 4. Garnish with coriander leaves and curry leaves.
