Chops in Cheese Sauce

Ingredients
•
Mutton chops (large chops meant for frying)
- 8
•
Garlic paste
- 1 ½ teaspoons
•
Ginger paste
- 1 ½ teaspoons
•
Papaya paste (raw)
- 2 tablespoons
•
Worcestershire sauce
- 1 ½ tablespoons
•
Oil
- 3 tablespoons
•
Salt
- as required
•
Coarsely crushed black pepper
- 1 teaspoon
•
Butter
- 4 tablespoons
•
Flour
- 2 tablespoons
•
Milk
- 1 ½ cups
•
Mustard powder
- a pinch
•
Cheese (grated)
- ½ cup
•
Egg yolks (beaten)
- 2
Method
1. In a bowl, combine the
ginger paste
,
garlic paste
, raw
papaya paste
,
worcestershire sauce
&
salt
.
2. Flatten the
mutton chops
with a mallet and rub the above
mixture
on them. Leave to
marinate
for 4 hours.
3.
Heat
oil
in a non stick
frying
pan &
cook
the
chops
on low
heat
until tender and browned on both sides.

Drain
and arrange in a
baking
dish.
5.
Melt
butter
in a saucepan,
add
the
flour
&
cook
for 2 minutes.
6. Turn the
heat
to low and
add
the
milk
slowly,
stirring
constantly
making
sure there are no lumps.
7.
Cook
for 4-5 minutes until
sauce
is thickened (thick custard like consistency).
8.
Remove
from
heat
&
stir
in the beaten
egg yolks
,
mustard powder
, a little
salt
and
pepper
.
9.
Mix
well.
Pour
this
sauce
over the
chops
&
bake
in a preheated oven at 350°F for 25 minutes.
10.
Serve
hot with
garlic
bread and a green salad.
