Chinese Fried Rice

Basmati rice

Spring onions
- 1 bunch

Carrots

Beans (cut)
- ½ cup

Cauliflower

Cabbage
- 150 grams
•
Capsicums
- 2

Peas
- ½ cup
•
Ajinomoto
- ½ teaspoon
•
White pepper powder
- ½ teaspoon
•
Salt
- as required
•
Caramelized sugar syrups
- 1 tablespoon
•
Soya sauce
- 3 teaspoons
•
Oil
- 4 tablespoons
Ingredients For Vinegar Chillies
•
Green chillies (cut into thin round pieces)
- 4
•
Plain vinegar
- ½ cup
•
Salt
- 1 teaspoon
•
Soya sauce
- 1 tablespoon
Method
1.
Make
the
vinegar
chillies
by
mixing
the listed
ingredients
in "For
Vinegar
chillies
" two to three hours before
serving
.
2.
Boil
rice
in 12 cups of
water
to which little
salt
and a Teaspoon. of
oil
is added.
3. When it is three fourth tender
drain
water
completely.
4. Allow the
rice
to cool completely by
spreading
on a broad plate.
5. Separate the grains.
6.
Cut
the
vegetables
into even sized very small pieces.
7.
Cut
spring onions
into one inch long pieces.
8.
Heat
oil
in a broad
frying
pan and
fry
onions
,
carrots
,
capsicum
,
cabbage
and
onion
stem in order given. (if using
peas
,
cook
separately and then
add
) while
frying
vegetables
add
half of the
Ajinomoto
.
9.
Fry
in a high flame for few minutes. (Till the
vegetables
become tender).
10.
Add
cooked
rice
,
salt
,
pepper
and caramel sugar.
11. Sprinkle
soya sauce
and
fry
in a high flame till
rice
is fried well.
12.
Serve
hot with
vinegar
chillies
.
