Chicken Sandwich

Ingredients
•
Chicken breast (boiled & shredded)
- 1
•
Mayonnaise sauce
- ½ cup
•
Lemon
- ½
•
Salt
- as required
•
Black pepper
- as required
•
Parsley/Coriander leaves
- a little
•
Cabbages/Lettuces (shredded)
- a little
Method
1.
Wash
the
chicken breast
.
2.
Boil
with ½ Teaspoon
salt
and ½ cup
water
till tender or pressure
cook
with ½ cup
water
and ½ Teaspoon
salt
to give 1 whistle.
3.
Debone
chicken
and flake them into tiny pieces.
4. Squeeze
lemon
juice on them.
5. Sprinkle some
salt
&
pepper
.
6.
Mix
the cool
chicken
pieces with the
mayonnaise sauce
.
7.
Spread
over the
slice
.
8.
Cover
with another
slice
and
cut
into triangles.
9.
Store
till
serving
time in a damp cloth.
10. They can be served as open sandwiches also.
11.
Cut
the slices with a biscuit cutter into small rounds and
spread
the
chicken
mixture
evenly.
12. Decorate with
parsley
or
coriander leaf
&
serve
on a bed of shredded
cabbage
or
lettuce
.
