Chicken Roll Ups

Ingredients

• • Chicken breasts (halves) - 8

Ingredients For Filling

• • Spinaches (finely chopped) - 3 cups
• • Mushroom (sliced) - 150 grams
• • Garlic paste - ½ teaspoon
• • Curd - ¼ cup
• • Salt - ¾ teaspoon
• • Pepper - ¾ teaspoon

Ingredients For Coating

• • Bread crumbs - 5 tablespoons
• • Salt - ½ teaspoon
• • Red chilly powder - ½ teaspoon
• • Curd - 1 tablespoon

Method

• 1. Cook all ingredients given under filling in a non stick pan on high heat till absolutely dry.
• 2. Place chicken breast half, bone side up between two pieces of plastic paper.
• 3. Working from the center to the edges, pound lightly with pounder or a rolling pin (belan) to flatten the breast.
• 4. Remove top plastic paper. Sprinkle little salt & pepper on the chicken.
• 5. Place 1 Tablespoon of filling in the center or spread filling on the chicken and roll up. Repeat it with all the breasts.
• 6. Mix bread crumbs, salt, red chilly powder & spread on a plate.
• 7. Roll chicken in curd or brush with curd and then roll them in bread crumbs.
• 8. Place on a baking dish and bake in a preheated oven at 180°C for 15-20 minutes or till chicken is tender.
• 9. To serve, slice each breast diagonally and serve with fresh salad & a soup for a complete meal.
• 10. For snacks, serve with wedges of lemon.
