Chicken Maryland

Ingredients
•
Chicken (cut into 8 pieces)
- 800 grams
•
Lemon juice
- 2 teaspoons
•
Salt
- as required
•
Pepper
- as required
•
Maida
- 3 tablespoons
•
Mustard powder
- ½ teaspoon
•
Chilly powder
- ½ teaspoon
•
Egg white
- 1
•
Freshly chopped coriander
- 1 tablespoon
•
Bread crumbs (dried)
- ½ cup
Method
1.
Wash
the
chicken
pieces. Sprinkle
salt
,
pepper
&
lemon juice
.
2. Pressure
cook
with ½ cup
water
to give 1 whistle.
3.
Remove
from fire. If
chicken
is not tender,
simmer
for 2 minutes &
drain
.
4.
Add
pepper
,
salt
,
chilly
&
mustard powder
to the
maida
.
5. Beat
egg white
.
Add
coriander
, a
pinch
of
salt
&
pepper
.
6. Press the
chicken
pieces into the
maida
well to coat.
7.
Dip
in beaten
egg white
and then
roll
in
bread crumbs
.
8.
Heat
oil
in kadai and deep
fry
the
chicken
on medium
heat
till golden brown.
9.
Drain
on paper.
Serve
hot.
