Chicken Macaroni With Tomato Sauce

Ingredients
•
Chicken breasts (boiled and shredded)
- 2
•
Uncooked macaronis
- 1 ¼ cups
•
Tomato puree
- ¼ cup
•
Tomato ketchup
- 2 tablespoons
•
Cream (fresh)
- 3 tablespoons
•
Red chilly paste
- ½ teaspoon
•
Tabasco sauce
- few drops
•
Sugar
- ¼ teaspoon
•
Parsley (chopped)
- 3 tablespoons
•
Oil
- 2 tablespoons
•
Capsicum to garnish (large)
- 1
Method
1.
Boil
3 cups of
water
with 1 Teaspoon of
salt
and one Teaspoon of
oil
.
2.
Add
macaroni
to the
boiling
water
.
3.
Cook
covered for 8-10 minutes till soft and well cooked but not mushy.
4.
Strain
and
wash
several times with
cold water
.
5. To
boil
chicken
,
add
¼ cup of
water
in a pressure cooker with ¼ Teaspoon of
salt
and
chicken
.
6. Pressure
cook
to give 2 whistles. Cool and shred the cooked
chicken
.
7.
Heat
oil
in a nonstick pan.
Add
the
chilly
paste
and
tomato puree
.
8.
Stir
for ½ minute.
Add
the tomato
sauce
and ¾ cup of
water
.
9.
Simmer
the
sauce
on low flame for 1-2 minutes.
10.
Add
salt
,
sugar
,
chilly
powder
or
tabasco sauce
.
11.
Keeping
the flame low,
add
the
cream
. Switch off the flame immediately.
12.
Add
the cooked
macaroni
,
chicken
and
parsley
.
Stir
gently.
13. Transfer to a bowl and
cover
and
keep
in a refrigerator to chill.
14. Before
serving
arrange some lettuce
leaves
on a
serving
platter.
15. If salad gets a little dry
add
a few Tablespoons
water
to
get
a slightly wet consistency.
16. Transfer the
macaroni
salad on the lettuce
leaves
.
