Chettinad Visiri Dosai

Ingredients
•
Rice flour
- 1 cup
•
Wheat flour
- ½ cup
•
Maida
- ½ cup
•
Rawa
- ½ cup
•
Water
- as required
•
Salt
- as required
•
Oil (for making dosas)
- as required
Ingredients For Seasoning
•
Oil
- 2 teaspoons
•
Mustard seeds
- ½ teaspoon
•
Cumin seeds
- ½ teaspoon
•
Bengal gram dal
- 1 teaspoon
•
Onion (finely chopped)
- 1
•
Green chillies (finely chopped)
- 2
•
Coriander leaves (fresh, finely chopped)
- a few
Method
1. In a bowl
mix
all the flours with
salt
and
water
to
make
a smooth
paste
without any lumps.
2. Let it
soak
for 2 hours.
3.
Heat
oil
in a kadai, crackle
mustard seeds
,
add
cumin seeds
,
bengal gram dal
and
fry
until golden brown.
4. Now
add
onions
,
green chillies
, curry
leaves
and sauté until they change to golden brown color.
Pour
this into the batter.
5. Adjust the
water
quantity in the batter and
make
the batter to a
pouring
consistency.
6.
Add
the chopped
coriander leaves
, curry
leaves
and
mix
well.
7.
Heat
tawa over low flame, when it is hot enough,
pour
the batter using a ladle. Drizzle
oil
along the sides of the dosa.
8.
Pour
oil
around the half cooked dosa and then
flip
to
cook
the other side and
make
it crispy.
9.
Serve
it with chutney or sambar.
